- 2 sweet potatoes
- 1 tbsp extra virgin olive oil
- Sea salt and pepper, to taste
Preheat oven to 400 degrees Fahrenheit. Rinse sweet potatoes under cold water. Cut each sweet potato in half, lengthwise. Cut lengthwise into ½ inch slices. Stack a few slices and cut the width of the sweet potato lengthwise again. Turn sweet potato and now make ½ inch wide cuts across to create cubes. Transfer sweet potato cubes to a bowl and toss with olive oil, sea salt and pepper. Place cubes on a baking sheet and place in the oven for 20-30 minutes. Test the sweet potatoes with a fork to check for doneness.
